I haven't talked about it much on the blog yet but we are transitioning to plant based and then eventually vegan, it was a big decision for our family but we agreed it was the best for our health and our daughters. I'll make a post about it soon. Anyway, I have always had a sweet tooth especially for brownies, I kid you not I used to eat half a pan in one sitting (don't judge me), so I decided to find a good brownie recipe that I love.
I went on Pinterest and found the recipe here. I made it and if it wasn't for the whole family I would've eaten it to myself, in one sitting. It was so good. Delicious, creamy and definitely didn't taste like there was a can of black beans in it! The recipe I altered a little bit, but she was my inspiration.
Finding a good brownie recipe was big for me, because it's my go-to dessert for events. This one is quick and can be done in less than an hour, and tastes better than any brownies I've ever had before!

Peanut Butter Vegan Brownies
Delicious and creamy brownies, topped with peanut butter and extra chocolate chips. Completely Vegan!
Ingredients
- 1-15 oz. can black beans
- 1/2 cup cocoa powder
- 1/3 cup granulated sugar, I used coconut
- 1/4 cup canola or coconut oil
- 1/4 cup soy or almond milk
- 1 tsp. vanilla extract
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 3 tbsp. creamy peanut butter
- 1/4 cup vegan chocolate chips
Instructions
Preheat over to 350. Lightly oil your pan before putting the brownies inPlace the beans, cocoa powder, sugar, oil, milk, vanilla, baking powder and salt into a food processor and blend until its completely smooth, you might have to scrape the sides a few times.Spread the batter into the oiled pan. Put the peanut butter on top in sections and swirl with a knife or chopstick. Add extra chocolate chips on top. Bake until a toothpick in the center comes out clean. Anywhere from 21-25 minutes. Remove and allow it to cool completely before cutting. Cut into 9 squares and serve, or eat it all to yourself, either or.

DeleteI don't have any special diets but have made vegan food and it's been a great success with my family. I have made bean brownies before but would like to try these. I have the almond milk and coconut oil!
